Ubercart Europe

I'm fairly new to ubercart, only finished configuring it for my site today, seemed to be working well until I tried to checkout something.
My sites based in Europe not in America, and theres only U.S and Canada as delivery/billing information. How would I go about chaning everything from U.S to U.K. $ to £, etc. Any help appreciated, thanks.

You might want to check the store configuration section?

I configured my site to GBR for united kingdom, but I dont know how to change the billing/shipping from america and canada etc
